What would I use it for? Uh… um… hmm. Who cares? It's freaking awesome! I'll find something to use it for.
FYI, thanks for the hardware suggestions, but… it's a Mac Pro. I'm mostly limited to the choices Apple gives me, so that graphics card is the best option currently. When they update the Pro with the hexa-core Xeons, hopefully they'll update the graphics card too.
I'm somewhat considering going with 2 small SSDs in RAID 0 for OS and applications, and 2 450 GB, 15k RPM HDDs in RAID 0 for my files. Insanely expensive though… it'd drive the price back up to $10k. (Not considering the need for an external drive for backup) Or! 4 450GB 15k RPM drives in RAID 5? That'd be around $12k… pretty harsh. But I could live with the standard single 640 GB 7200-rpm drive for a while until I make the money to buy the fancy new drives.

Just get two of NVIDIA or ATI's best DUAL video cards and then you have an unstoppable machine.
i think the important thing to ask is what will you DO with this thing, is it just going to be for games or will you actually be making things with it?
